Ingredients

  • 4 medium-sized squid, cleaned
  • 1 cup basmati rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Start by preparing the spiced rice. In a pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent.
  2. Add the basmati rice to the pan and stir to coat the grains with the oil and aromatics. Cook for 2-3 minutes.
  3. Stir in the ground cumin, coriander, paprika, and cayenne pepper. Add the diced tomatoes and season with salt and pepper. Pour in 2 cups of water and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  4. While the rice is cooking, prepare the squid. Rinse the cleaned squid under cold water and pat dry with paper towels. Season the inside of the squid with salt and pepper.
  5. Stuff the cooked spiced rice into the cavity of each squid, leaving some room at the top for the rice to expand while cooking. Secure the opening of each squid with a toothpick to prevent the rice from falling out.
  6. In a large pan, heat the remaining olive oil over medium-high heat. Add the stuffed squid and sear for 2-3 minutes on each side, until they are lightly browned.
  7. Pour the tomato sauce over the squid, cover the pan, and simmer for 15-20 minutes, or until the squid is tender and the flavors have melded together.
