Kalamaria Yemista (greek-style Stuffed Calamari)

Ingredients

  • 4 large calamari
  • 1 cup cooked rice
  • 1 tomato, diced
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Clean the calamari and remove the tentacles. Chop the tentacles and set aside.
  2. In a bowl, mix the cooked rice, chopped tomato, onion, garlic, parsley, mint, olive oil, and lemon juice. Season with salt and pepper.
  3. Stuff the calamari with the rice mixture and secure the openings with toothpicks.
  4. Heat some olive oil in a pan and sauté the chopped calamari tentacles. Place the stuffed calamari in the pan and cook for about 5 minutes on each side until golden brown.
  5. Once cooked, remove the toothpicks and slice the stuffed calamari. Serve hot and enjoy!
