Kalan Masala (creamy Mushroom Masala)

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 200g button mushrooms, sliced
  • 1 can (400ml) coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a pan over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Add the minced garlic and grated ginger to the pan, and cook for another 2 minutes.
  3. Stir in the ground cumin, ground coriander, turmeric, and chili powder. Cook for 1 minute to toast the spices.
  4. Add the sliced mushrooms to the pan and cook until they are slightly browned.
  5. Pour in the coconut milk and season with salt. Simmer for 10-15 minutes until the mushrooms are tender and the sauce has thickened.
  6. Garnish with fresh cilantro and serve hot with steamed rice or naan.
