Калдуны (Kalduny) are a traditional Belarusian dish, similar to dumplings, typically filled with meat, mushrooms, or cheese. They are a popular dish during the Carnival season and are enjoyed by many across Belarus.

Kalduny Carnival (Калдуны)

Ingredients

  • 2 cups all-purpose flour
  • 1 egg
  • 1/2 cup water
  • 1/2 lb ground pork
  • 1 onion, finely chopped
  • 1 cup mushrooms, finely chopped
  • 1/2 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the flour, egg, and water to form a dough. Knead the dough until smooth, then cover and let it rest for 15 minutes.
  2. In a separate bowl, combine the ground pork, onion, mushrooms, cheese, salt, and pepper to make the filling.
  3. Roll out the dough on a floured surface and cut it into circles using a glass or cookie cutter.
  4. Place a spoonful of the filling in the center of each circle, then fold the dough over and seal the edges to form a half-moon shape.
  5. Boil the kalduny in salted water for about 5-7 minutes, or until they float to the surface.
  6. Remove the kalduny from the water and serve hot.
