Kalo (taro) Salad
Kalo (Taro) Salad is a traditional Niuean dish that features the starchy and nutty flavor of taro combined with fresh vegetables and a tangy dressing. This refreshing salad is perfect for a light and healthy meal.
Ingredients
- 2 large taro roots, peeled and diced
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped roasted peanuts
- 1/4 cup coconut milk
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Boil the diced taro in a pot of salted water until tender, about 15 minutes. Drain and let cool.
- In a large bowl, combine the cooked taro, cucumber, red bell pepper, red onion, cilantro, and mint.
- In a small bowl, whisk together the coconut milk, lime juice, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to coat.
- Sprinkle the chopped peanuts on top before serving.
