Kalo (taro) Salad

Ingredients

  • 2 large taro roots, peeled and diced
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup coconut milk
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Boil the diced taro in a pot of salted water until tender, about 15 minutes. Drain and let cool.
  2. In a large bowl, combine the cooked taro, cucumber, red bell pepper, red onion, cilantro, and mint.
  3. In a small bowl, whisk together the coconut milk, lime juice, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss to coat.
  5. Sprinkle the chopped peanuts on top before serving.
