Ingredients

  • 500g fresh egg noodles
  • 3 cloves garlic, minced
  • 4 shallots, thinly sliced
  • 2 tablespoons lard or vegetable oil
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • Chopped spring onions for garnish

Instructions

  1. Boil the fresh egg noodles in a pot of water for 1-2 minutes, then drain and set aside.
  2. Heat the lard or vegetable oil in a wok or large pan over medium heat.
  3. Add the minced garlic and sliced shallots, and stir-fry until fragrant and golden brown.
  4. Add the boiled noodles to the wok, followed by the light soy sauce, dark soy sauce, sugar, and white pepper.
  5. Toss and stir the noodles until they are evenly coated with the sauce and heated through.
  6. Transfer the noodles to serving plates and garnish with chopped spring onions.
