Kanagawa Yokosuka Curry Cruise

Ingredients

  • 2 onions, sliced
  • 2 carrots, diced
  • 2 potatoes, cubed
  • 1 lb (450g) chicken thighs, cut into bite-sized pieces
  • 2 cups (480ml) chicken broth
  • 1/4 cup (60ml) soy sauce
  • 2 tbsp (30g) curry powder
  • 1 tbsp (15g) tomato paste
  • 2 cloves garlic, minced
  • 1 inch (2.5cm) ginger, grated
  • 2 tbsp (30ml) vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, carrots, and potatoes, and sauté for 5 minutes.
  2. Add the chicken pieces, garlic, and ginger to the pot. Cook until the chicken is no longer pink.
