Kanda Poha (कांदा पोहा)

Ingredients

  • 2 cups poha (flattened rice)
  • 1 large onion, finely chopped
  • 1-2 green chilies, finely chopped
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/4 cup roasted peanuts
  • 2-3 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Rinse the poha in a colander under running water for a few seconds. Drain and set aside.
  2. Heat oil in a pan and add mustard seeds. Once they splutter, add chopped green chilies and onions. Sauté until the onions turn translucent.
  3. Add turmeric powder and mix well. Then, add the rinsed poha to the pan.
  4. Add salt to taste and mix everything gently. Cover and cook for 2-3 minutes on low heat.
  5. Once the poha is heated through, add roasted peanuts and mix well.
  6. Garnish with fresh coriander leaves and serve hot.
