Kanda Soup (spicy Cow Foot Soup)
Kanda Soup, also known as Spicy Cow Foot Soup, is a traditional Cameroonian dish that is hearty, flavorful, and perfect for warming up on a chilly day.
Ingredients
- 2 lb cow foot, cleaned and cut into pieces
- 1 onion, chopped
- 3 tomatoes, diced
- 2 hot peppers, chopped
- 1/4 cup ground crayfish
- 2 tbsp palm oil
- 1 tsp ground white pepper
- 1 tsp salt
- 6 cups water
Instructions
- In a large pot, combine the cow foot, onion, tomatoes, hot peppers, crayfish, palm oil, white pepper, and salt.
- Add water and bring to a boil over medium heat.
- Reduce the heat to low, cover, and simmer for about 2 hours, or until the cow foot is tender.
- Skim off any foam that rises to the surface during cooking.
- Adjust seasoning to taste and serve hot.
