Kanda Soup (spicy Cow Foot Soup)

Ingredients

  • 2 lb cow foot, cleaned and cut into pieces
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 2 hot peppers, chopped
  • 1/4 cup ground crayfish
  • 2 tbsp palm oil
  • 1 tsp ground white pepper
  • 1 tsp salt
  • 6 cups water

Instructions

  1. In a large pot, combine the cow foot, onion, tomatoes, hot peppers, crayfish, palm oil, white pepper, and salt.
  2. Add water and bring to a boil over medium heat.
  3. Reduce the heat to low, cover, and simmer for about 2 hours, or until the cow foot is tender.
  4. Skim off any foam that rises to the surface during cooking.
  5. Adjust seasoning to taste and serve hot.
