Kanda (spicy Cow Foot Stew)
Kanda is a traditional Cameroonian dish made with spicy cow foot stew. It's a flavorful and hearty meal that is perfect for a cozy night in.
Ingredients
- 2 lbs cow foot, cleaned and cut into pieces
- 1 onion, chopped
- 3 tomatoes, diced
- 2 tbsp tomato paste
- 2 habanero peppers, chopped
- 1 tsp ground ginger
- 1 tsp ground garlic
- 1 tsp ground white pepper
- 1/2 cup vegetable oil
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onions and sauté until translucent.
- Add the cow foot pieces and brown on all sides.
- Stir in the tomatoes, tomato paste, habanero peppers, ginger, garlic, and white pepper.
- Pour in enough water to cover the cow foot, then bring to a boil.
- Reduce the heat, cover, and simmer for 2 hours or until the cow foot is tender.
- Season with salt to taste.
- Serve the kanda hot with a side of fufu or rice.
