Kanda (spicy Cow Foot Stew)

Ingredients

  • 2 lbs cow foot, cleaned and cut into pieces
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 2 tbsp tomato paste
  • 2 habanero peppers, chopped
  • 1 tsp ground ginger
  • 1 tsp ground garlic
  • 1 tsp ground white pepper
  • 1/2 cup vegetable oil
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onions and sauté until translucent.
  3. Add the cow foot pieces and brown on all sides.
  4. Stir in the tomatoes, tomato paste, habanero peppers, ginger, garlic, and white pepper.
  5. Pour in enough water to cover the cow foot, then bring to a boil.
  6. Reduce the heat, cover, and simmer for 2 hours or until the cow foot is tender.
  7. Season with salt to taste.
  8. Serve the kanda hot with a side of fufu or rice.
