Kande Pohe (कांदे पोहे)

Ingredients

  • 2 cups flattened rice (poha)
  • 1 large onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/4 cup fresh coriander leaves, chopped
  • 2 tablespoons oil
  • Salt to taste
  • Juice of 1 lemon

Instructions

  1. Rinse the flattened rice in a colander and set aside to drain.
  2. Heat oil in a pan and add mustard seeds. Once they start to splutter, add the chopped onions and green chilies. Sauté until the onions turn translucent.
  3. Add turmeric powder and mix well. Then, add the drained flattened rice and salt. Mix gently to combine all the ingredients.
  4. Cover the pan and let the poha cook for 5-7 minutes on low heat, stirring occasionally.
  5. Once the poha is cooked, turn off the heat and add the lemon juice. Mix well.
  6. Garnish with chopped coriander leaves and serve hot.
