Ingredients
- 1 whole chicken, cut into pieces
- 1 cup peanut butter
- 2 onions, chopped
- 3 tomatoes, diced
- 3 carrots, sliced
- 2 sweet potatoes, peeled and diced
- 1 scotch bonnet pepper, chopped
- 1 cup okra, sliced
- 6 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, brown the chicken pieces over medium heat.
- Add the onions, tomatoes, and scotch bonnet pepper to the pot and cook until the vegetables are softened.
- Stir in the peanut butter until well combined.
- Pour in the chicken broth and bring the soup to a boil.
- Add the sweet potatoes, carrots, and okra to the pot, then reduce the heat and let the soup simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
- Season with salt and pepper to taste.
