Ingredients
- 1 whole chicken, cut into pieces
- 1 cup creamy peanut butter
- 2 onions, chopped
- 3 tomatoes, diced
- 3 cups chicken broth
- 1 teaspoon ground ginger
- 1 teaspoon ground coriander
- 1 teaspoon cayenne pepper
- Salt to taste
- Pepper to taste
- 2 tablespoons vegetable oil
- 2 cups cooked white rice, for serving
Instructions
- Season the chicken pieces with salt and pepper.
- In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken from the pot and set aside.
- In the same pot, sauté the onions until translucent. Add the tomatoes, ground ginger, ground coriander, and cayenne pepper. Cook for 5 minutes.
- Return the chicken pieces to the pot. Add the chicken broth and peanut butter. Stir to combine.
- Cover the pot and simmer for 45-50 minutes, or until the chicken is cooked through and the sauce has thickened.
- Serve the Kandja au Poulet over cooked white rice.
