Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup creamy peanut butter
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 cups chicken broth
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon cayenne pepper
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons vegetable oil
  • 2 cups cooked white rice, for serving

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, sauté the onions until translucent. Add the tomatoes, ground ginger, ground coriander, and cayenne pepper. Cook for 5 minutes.
  4. Return the chicken pieces to the pot. Add the chicken broth and peanut butter. Stir to combine.
  5. Cover the pot and simmer for 45-50 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Serve the Kandja au Poulet over cooked white rice.
