Kandja (malian Chicken And Vegetable Soup)
Kandja is a traditional Malian chicken and vegetable soup that is packed with flavor and nutrition. This hearty soup is perfect for a cozy family dinner or for warming up on a chilly day.
Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 3 carrots, sliced
- 2 potatoes, diced
- 1 cup okra, chopped
- 1 cup cabbage, shredded
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, chopped
- 1 teaspoon ground ginger
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 8 cups chicken broth
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the diced tomatoes, carrots, potatoes, okra, and cabbage.
- Add the minced garlic, chopped scotch bonnet pepper, ground ginger, coriander, cumin, salt, and pepper. Stir to combine.
- Pour in the chicken broth and bring the soup to a boil. Reduce the heat and let it simmer for about 1 hour, or until the chicken is cooked through and the vegetables are tender.
- Adjust the seasoning if needed and serve the Kandja hot.
