Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 cup okra, chopped
  • 1 cup cabbage, shredded
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, chopped
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 cups chicken broth

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onions and sauté until translucent.
  2. Add the chicken pieces to the pot and brown on all sides.
  3. Stir in the diced tomatoes, carrots, potatoes, okra, and cabbage.
  4. Add the minced garlic, chopped scotch bonnet pepper, ground ginger, coriander, cumin, salt, and pepper. Stir to combine.
  5. Pour in the chicken broth and bring the soup to a boil. Reduce the heat and let it simmer for about 1 hour, or until the chicken is cooked through and the vegetables are tender.
  6. Adjust the seasoning if needed and serve the Kandja hot.
