Kanelbullar (swedish Cinnamon Buns)
Kanelbullar, or Swedish Cinnamon Buns, are a classic Northern European pastry that are perfect for fika (a Swedish coffee break). These buns are flavored with cinnamon and cardamom, and are often topped with pearl sugar for a bit of crunch.
Ingredients
- 2 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 cup unsalted butter, melted
- 1 cup milk, warmed
- 2 1/4 teaspoons active dry yeast
- 1 egg, beaten
- Pearl sugar, for topping (optional)
Instructions
- In a large bowl, combine the flour, sugar, salt, cinnamon, and cardamom.
- In a separate bowl, mix the melted butter, warm milk, and yeast. Let it sit for 5 minutes until frothy.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
- Punch down the dough and divide it into 12 equal pieces. Shape each piece into a bun and place on a lined baking sheet.
- Cover the buns and let them rise for another 30 minutes.
- Preheat the oven to 425°F (220°C).
- Brush the buns with the beaten egg and sprinkle with pearl sugar, if using.
- Bake for 10-12 minutes, or until golden brown.
- Let the buns cool on a wire rack before serving.
