Kangaroo Bolognese Spaghetti (袋鼠肉酱意大利面)

Ingredients
- 500g kangaroo mince
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 carrots, finely diced
- 2 celery stalks, finely diced
- 400g canned diced tomatoes
- 1/2 cup red wine
- 1/2 cup beef stock
- 2 tbsp tomato paste
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
- 400g spaghetti
- Grated Parmesan cheese, for serving
Instructions
- In a large pot, heat some oil over medium heat. Add the kangaroo mince and cook until browned. Remove the mince from the pot and set aside.
- In the same pot, add a bit more oil if needed and sauté the onion and garlic until softened.
- Add the carrots and celery, and cook for a few minutes until they start to soften.
- Pour in the red wine and let it simmer for a couple of minutes to reduce slightly.
- Return the kangaroo mince to the pot and add the diced tomatoes, beef stock, tomato paste, oregano, and basil. Season with salt and pepper.
- Simmer the sauce for 45-60 minutes, stirring occasionally, until it has thickened and the flavors have melded together.
- While the sauce is simmering, cook the spaghetti according to the package instructions until al dente. Drain and set aside.
- Serve the kangaroo Bolognese sauce over the cooked spaghetti, and top with grated Parmesan cheese.
