Ingredients

  • 500g ground kangaroo meat
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 4 metal or soaked wooden skewers

Instructions

  1. In a large bowl, mix together the kangaroo meat, onion, garlic, cumin, coriander, paprika, cayenne pepper, salt, pepper, parsley, mint, breadcrumbs, and beaten egg.
  2. Divide the mixture into 4 equal portions and shape each portion onto a skewer to form a kebab shape.
  3. Heat a grill or stovetop pan over medium heat and cook the kebabs for 12-15 minutes, turning occasionally, until cooked through.
  4. Serve the kangaroo kofta kebabs with your choice of sides and enjoy!
