Ingredients
- 500g kangaroo meat, diced
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (400g) crushed tomatoes
- 1 cup beef stock
- 1/2 cup red wine
- Salt and pepper to taste
- 400g pasta of your choice
- Grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add the kangaroo meat and cook until browned. Remove the meat from the pot and set aside.
- In the same pot, add the onion and garlic. Cook until softened.
- Add the carrots and celery, and cook for a few minutes until they begin to soften.
- Return the kangaroo meat to the pot. Pour in the crushed tomatoes, beef stock, and red wine. Season with salt and pepper.
- Bring the mixture to a simmer, then reduce the heat and let it simmer for 1.5 hours, stirring occasionally.
- Cook the pasta according to the package instructions. Drain and set aside.
- Serve the kangaroo ragu over the cooked pasta, and sprinkle with grated Parmesan cheese.
