Kangaroo Ragu Pasta

Ingredients

  • 500g kangaroo meat, diced
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (400g) crushed tomatoes
  • 1 cup beef stock
  • 1/2 cup red wine
  • Salt and pepper to taste
  • 400g pasta of your choice
  • Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the kangaroo meat and cook until browned. Remove the meat from the pot and set aside.
  2. In the same pot, add the onion and garlic. Cook until softened.
  3. Add the carrots and celery, and cook for a few minutes until they begin to soften.
  4. Return the kangaroo meat to the pot. Pour in the crushed tomatoes, beef stock, and red wine. Season with salt and pepper.
  5. Bring the mixture to a simmer, then reduce the heat and let it simmer for 1.5 hours, stirring occasionally.
  6. Cook the pasta according to the package instructions. Drain and set aside.
  7. Serve the kangaroo ragu over the cooked pasta, and sprinkle with grated Parmesan cheese.
