Ingredients

  • 500g water spinach (kangkung), washed and cut into 2-inch lengths
  • 3 tablespoons shrimp paste (balacan)
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 5 red chilies, sliced
  • 2 tablespoons cooking oil
  • 1 teaspoon sugar
  • Salt to taste

Instructions

  1. Heat the cooking oil in a wok or large pan over medium heat.
  2. Add the shallots, garlic, and red chilies. Stir-fry until fragrant.
  3. Add the shrimp paste and continue to stir-fry for 2-3 minutes.
  4. Add the water spinach and stir-fry for another 3-4 minutes until the leaves are wilted but still vibrant green.
  5. Season with sugar and salt to taste. Stir well to combine.
  6. Transfer to a serving dish and serve hot with steamed rice.
