Ingredients
- 500g water spinach (kangkung), washed and cut into 2-inch lengths
- 3 tablespoons shrimp paste (balacan)
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 5 red chilies, sliced
- 2 tablespoons cooking oil
- 1 teaspoon sugar
- Salt to taste
Instructions
- Heat the cooking oil in a wok or large pan over medium heat.
- Add the shallots, garlic, and red chilies. Stir-fry until fragrant.
- Add the shrimp paste and continue to stir-fry for 2-3 minutes.
- Add the water spinach and stir-fry for another 3-4 minutes until the leaves are wilted but still vibrant green.
- Season with sugar and salt to taste. Stir well to combine.
- Transfer to a serving dish and serve hot with steamed rice.
