Ingredients
- 500g water spinach (kangkung), washed and trimmed
- 4 shallots, thinly sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 tomato, diced
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
- Salt to taste
- 3 tablespoons cooking oil
Instructions
- Heat the cooking oil in a wok or large pan over medium heat.
- Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the tomato, tamarind paste, sugar, and salt. Stir well.
- Add the water spinach and stir-fry for 3-4 minutes until wilted but still vibrant green.
