Kangkung Balado (makassar-style Spicy Stir-fried Water Spinach)

Ingredients

  • 500g water spinach (kangkung), washed and trimmed
  • 4 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 tomato, diced
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste
  • 3 tablespoons cooking oil

Instructions

  1. Heat the cooking oil in a wok or large pan over medium heat.
  2. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  3. Add the tomato, tamarind paste, sugar, and salt. Stir well.
  4. Add the water spinach and stir-fry for 3-4 minutes until wilted but still vibrant green.
  5. Remove from heat and transfer to a serving dish.
