Kangkung Balado (spicy Stir-fried Water Spinach)

Ingredients

  • 500g water spinach (kangkung), washed and cut into 2-inch lengths
  • 3 shallots, finely chopped
  • 4 cloves garlic, minced
  • 5 red chilies, thinly sliced
  • 2 tomatoes, cut into wedges
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste
  • 2 tablespoons cooking oil

Instructions

  1. Heat the cooking oil in a wok or large pan over medium heat.
  2. Add the shallots, garlic, and red chilies. Stir-fry until fragrant.
  3. Toss in the water spinach and stir-fry for 2-3 minutes until wilted.
  4. Add the tomatoes, tamarind paste, sugar, and salt. Stir well to combine.
  5. Cook for another 2-3 minutes until the tomatoes are slightly softened.
  6. Remove from heat and transfer to a serving dish.
