Ingredients
- 500g water spinach (kangkung), washed and cut into 2-inch lengths
- 3 shallots, finely chopped
- 4 cloves garlic, minced
- 5 red chilies, thinly sliced
- 2 tomatoes, cut into wedges
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
- Salt to taste
- 2 tablespoons cooking oil
Instructions
- Heat the cooking oil in a wok or large pan over medium heat.
- Add the shallots, garlic, and red chilies. Stir-fry until fragrant.
- Toss in the water spinach and stir-fry for 2-3 minutes until wilted.
- Add the tomatoes, tamarind paste, sugar, and salt. Stir well to combine.
- Cook for another 2-3 minutes until the tomatoes are slightly softened.
- Remove from heat and transfer to a serving dish.
