Kankies (conkies)
Kankies, also known as Conkies, are a traditional Barbadian delicacy enjoyed during the Independence Day celebrations. These sweet and savory treats are made with a combination of cornmeal, coconut, pumpkin, and spices, all wrapped in a banana leaf and steamed to perfection.
Ingredients
- 2 cups cornmeal
- 1 cup grated coconut
- 1 cup grated pumpkin
- 1 cup brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp grated nutmeg
- 1/2 tsp salt
- 1/4 cup raisins
- 1/4 cup mixed peel
- 1/4 cup melted butter
- 1 cup coconut milk
- 12 banana leaves, softened in hot water
Instructions
- In a large bowl, combine the cornmeal, grated coconut, grated pumpkin, brown sugar, cinnamon, nutmeg, and salt.
- Add the raisins, mixed peel, melted butter, and coconut milk to the dry ingredients. Mix well to form a thick batter.
- Place a softened banana leaf on a flat surface and spoon a portion of the batter onto the center of the leaf.
- Wrap the banana leaf around the batter to form a neat parcel, then secure with kitchen twine.
- Repeat the process with the remaining batter and banana leaves.
- Place the wrapped kankies in a large steamer and steam for 1 hour.
- Remove from the steamer and let cool slightly before unwrapping and serving.
