Ingredients

  • 1 cup rice flour
  • 1 1/2 cups coconut milk
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup sweet corn kernels
  • 1/4 cup green onions, chopped

Instructions

  1. In a bowl, mix the rice flour, coconut milk, sugar, and salt until well combined.
  2. Heat the kanom krok pan over medium heat and lightly grease the indentations with oil.
  3. Pour the batter into the indentations, then add a few sweet corn kernels and chopped green onions on top of each pancake.
  4. Cover the pan and cook for 5-7 minutes until the pancakes are set and golden brown on the bottom.
  5. Use a small spoon to carefully flip the pancakes and cook for another 3-4 minutes until the other side is golden brown and crispy.
  6. Remove the pancakes from the pan and serve hot.
