Kanom Krok (thai Coconut Pancakes)
Kanom Krok, also known as Thai Coconut Pancakes, are a popular street food in Thailand. These delicious little pancakes are crispy on the outside and soft and creamy on the inside, with a subtle coconut flavor.
Ingredients
- 1 cup rice flour
- 1 1/2 cups coconut milk
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/2 cup sweet corn kernels
- 1/4 cup green onions, chopped
Instructions
- In a bowl, mix the rice flour, coconut milk, sugar, and salt until well combined.
- Heat the kanom krok pan over medium heat and lightly grease the indentations with oil.
- Pour the batter into the indentations, then add a few sweet corn kernels and chopped green onions on top of each pancake.
- Cover the pan and cook for 5-7 minutes until the pancakes are set and golden brown on the bottom.
- Use a small spoon to carefully flip the pancakes and cook for another 3-4 minutes until the other side is golden brown and crispy.
- Remove the pancakes from the pan and serve hot.
