Kanpur Ki Kulfi Falooda (कानपुर की कुल्फी फ़ालूदा)

Kulfi Falooda is a popular Indian dessert, especially in the northern city of Kanpur. This rich and creamy dessert is a perfect treat for a hot summer day.

Kanpur Ki Kulfi Falooda (कानपुर की कुल्फी फ़ालूदा)

Ingredients

  • 1 liter full cream milk
  • 1/2 cup sugar
  • 1/4 cup chopped mixed nuts (almonds, pistachios, cashews)
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons rose syrup
  • 1/2 cup falooda sev (vermicelli)
  • 1/4 cup soaked sabja seeds (sweet basil seeds)
  • 4 scoops of kulfi

Instructions

  1. In a heavy-bottomed pan, bring the milk to a boil. Simmer and reduce the milk to half its original quantity, stirring occasionally.
  2. Add sugar, chopped nuts, and cardamom powder to the reduced milk. Mix well and cook for another 5 minutes.
  3. Remove the milk mixture from heat and let it cool to room temperature.
  4. Cook the falooda sev as per the package instructions. Once cooked, rinse it with cold water and keep it aside.
  5. To assemble the kulfi falooda, take a tall glass. Add a tablespoon of rose syrup at the bottom.
  6. Add a spoonful of cooked falooda sev on top of the rose syrup.
  7. Next, add a spoonful of soaked sabja seeds.
  8. Now, pour the prepared kulfi falooda mixture into the glass, filling it up to 3/4 of the glass.
  9. Top it with a scoop of kulfi and drizzle some more rose syrup on top.
  10. Garnish with chopped nuts and serve chilled.
