Kanpur Ki Kulfi Faluda (कानपुर की कुल्फी फालूदा)
Kulfi Faluda is a popular Indian dessert, especially in the northern region. This recipe is a specialty of Kanpur, a city in the state of Uttar Pradesh. It's a delicious combination of creamy kulfi, vermicelli, and flavored syrup, topped with nuts and basil seeds.
Ingredients
- 1 liter full-fat milk
- 1/2 cup sugar
- 1/4 cup chopped mixed nuts (almonds, pistachios, cashews)
- 1/4 cup vermicelli
- 2 tbsp basil seeds (sabja)
- 1/4 cup rose syrup
- 1/4 tsp cardamom powder
Instructions
- Boil the milk in a heavy-bottomed pan, stirring continuously until it reduces to half.
- Add sugar and cardamom powder, and continue to cook until it thickens to a rabri-like consistency.
- Remove from heat and let it cool. Pour into kulfi molds and freeze until set.
- Cook the vermicelli as per the package instructions, then rinse with cold water and set aside.
- Soak the basil seeds in water until they swell up.
- To assemble, place a few tablespoons of cooked vermicelli in serving glasses, add a scoop of kulfi, drizzle with rose syrup, and sprinkle with chopped nuts and basil seeds.
