Kanpur Ki Kulfi Faluda (कानपुर की कुल्फी फालूदा)

Kulfi Faluda is a popular Indian dessert, especially in the northern region. This recipe is a specialty of Kanpur, a city in the state of Uttar Pradesh. It's a delicious combination of creamy kulfi, vermicelli, and flavored syrup, topped with nuts and basil seeds.

Kanpur Ki Kulfi Faluda (कानपुर की कुल्फी फालूदा)

Ingredients

  • 1 liter full-fat milk
  • 1/2 cup sugar
  • 1/4 cup chopped mixed nuts (almonds, pistachios, cashews)
  • 1/4 cup vermicelli
  • 2 tbsp basil seeds (sabja)
  • 1/4 cup rose syrup
  • 1/4 tsp cardamom powder

Instructions

  1. Boil the milk in a heavy-bottomed pan, stirring continuously until it reduces to half.
  2. Add sugar and cardamom powder, and continue to cook until it thickens to a rabri-like consistency.
  3. Remove from heat and let it cool. Pour into kulfi molds and freeze until set.
  4. Cook the vermicelli as per the package instructions, then rinse with cold water and set aside.
  5. Soak the basil seeds in water until they swell up.
  6. To assemble, place a few tablespoons of cooked vermicelli in serving glasses, add a scoop of kulfi, drizzle with rose syrup, and sprinkle with chopped nuts and basil seeds.
