Kanpur Ki Murg Musallam (कानपुर की मुर्ग़ मसल्लम)

Ingredients

  • 1 whole chicken, cleaned and skin removed
  • 2 cups yogurt
  • 2 onions, finely sliced
  • 4 tomatoes, pureed
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon nutmeg powder
  • 1/4 cup ghee
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Marinate the chicken with yogurt, turmeric powder, red chili powder, and salt. Let it sit for 30 minutes.
  2. Heat ghee in a large pan and sauté the onions until golden brown.
  3. Add the garlic and ginger, and cook for 2 minutes.
  4. Stir in the tomato puree and cook until the ghee separates.
  5. Add the marinated chicken and cook on low heat for 30 minutes, turning occasionally.
  6. Sprinkle garam masala, coriander powder, cumin powder, and nutmeg powder. Cook for another 10 minutes.
  7. Garnish with fresh coriander leaves before serving.
