Kanpur Ki Peda Kheer (कानपुर की पेड़ा खीर)
कानपुर की पेड़ा खीर (Kanpur Ki Peda Kheer) is a traditional dessert from the Uttar Pradesh Cuisine. It is a rich and creamy rice pudding infused with the flavors of the famous Kanpur Ki Peda, a popular Indian sweet.
Ingredients
- 1 liter full-fat milk
- 1/2 cup basmati rice
- 1/2 cup sugar
- 4-5 pieces of Kanpur Ki Peda, grated
- 1/4 teaspoon cardamom powder
- Slivered almonds and pistachios for garnish
Instructions
- In a heavy-bottomed pan, bring the milk to a boil.
- Wash the basmati rice and add it to the boiling milk. Simmer on low heat, stirring occasionally, until the rice is cooked and the milk has reduced to a creamy consistency.
- Add sugar and grated Kanpur Ki Peda to the rice pudding, and mix well until the peda is fully melted and incorporated.
- Stir in the cardamom powder and cook for another 5 minutes.
- Remove from heat and let it cool to room temperature.
- Refrigerate the Kanpur Ki Peda Kheer for a few hours before serving.
- Garnish with slivered almonds and pistachios before serving.
