Kanya (groundnut Brittle)

Ingredients

  • 2 cups raw peanuts
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Instructions

  1. In a large, heavy-bottomed skillet, toast the raw peanuts over medium heat for 5-7 minutes, stirring frequently, until they are golden brown and fragrant. Remove from the skillet and set aside.
  2. In the same skillet, combine the sugar, water, and salt. Cook over medium heat, stirring constantly, until the sugar has dissolved.
  3. Once the sugar has dissolved, stop stirring and let the mixture cook until it reaches a temperature of 300°F on a candy thermometer.
  4. Remove the skillet from the heat and quickly stir in the vanilla extract and baking soda. The mixture will bubble up, so be careful.
  5. Immediately stir in the toasted peanuts until they are evenly coated with the sugar mixture.
  6. Pour the mixture onto a parchment-lined baking sheet and spread it out into an even layer using a spatula.
  7. Let the groundnut brittle cool and harden for about 30 minutes, then break it into pieces and enjoy!
