Kanya (groundnut Brittle)
Kanya, also known as Groundnut Brittle, is a popular sweet and crunchy snack in Sierra Leone. It is made with simple ingredients and is perfect for satisfying a sweet tooth.
Ingredients
- 2 cups raw peanuts
- 1 cup granulated sugar
- 1/2 cup water
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
Instructions
- In a large, heavy-bottomed skillet, toast the raw peanuts over medium heat for 5-7 minutes, stirring frequently, until they are golden brown and fragrant. Remove from the skillet and set aside.
- In the same skillet, combine the sugar, water, and salt. Cook over medium heat, stirring constantly, until the sugar has dissolved.
- Once the sugar has dissolved, stop stirring and let the mixture cook until it reaches a temperature of 300°F on a candy thermometer.
- Remove the skillet from the heat and quickly stir in the vanilla extract and baking soda. The mixture will bubble up, so be careful.
- Immediately stir in the toasted peanuts until they are evenly coated with the sugar mixture.
- Pour the mixture onto a parchment-lined baking sheet and spread it out into an even layer using a spatula.
- Let the groundnut brittle cool and harden for about 30 minutes, then break it into pieces and enjoy!
