Ingredients
- 1 lb pork loin, thinly sliced
- 2 tbsp red curry paste
- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 2 tbsp soy sauce
- 2 tbsp fish sauce
- 2 tbsp brown sugar
- 1/2 cup chopped cilantro
- 8 oz rice vermicelli noodles
- 1/2 cup bean sprouts
- 2 green onions, thinly sliced
- 2 limes, cut into wedges
Instructions
- In a large pot, heat the red curry paste over medium heat for 1 minute.
- Add the pork slices and cook until browned.
- Pour in the chicken broth and coconut milk, then add soy sauce, fish sauce, and brown sugar. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Cook the rice vermicelli noodles according to the package instructions.
- Divide the cooked noodles among serving bowls and ladle the pork and broth over the noodles.
- Garnish with cilantro, bean sprouts, green onions, and lime wedges before serving.
