Ingredients

  • 1 lb pork loin, thinly sliced
  • 2 tbsp red curry paste
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1/2 cup chopped cilantro
  • 8 oz rice vermicelli noodles
  • 1/2 cup bean sprouts
  • 2 green onions, thinly sliced
  • 2 limes, cut into wedges

Instructions

  1. In a large pot, heat the red curry paste over medium heat for 1 minute.
  2. Add the pork slices and cook until browned.
  3. Pour in the chicken broth and coconut milk, then add soy sauce, fish sauce, and brown sugar. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Cook the rice vermicelli noodles according to the package instructions.
  5. Divide the cooked noodles among serving bowls and ladle the pork and broth over the noodles.
  6. Garnish with cilantro, bean sprouts, green onions, and lime wedges before serving.
