Kapampangan Noodles (pancit Luglug)
Pancit Luglug, also known as Kapampangan Noodles, is a popular noodle dish in Kapampangan cuisine. It is made with thick rice noodles, savory shrimp sauce, and an assortment of toppings, making it a flavorful and satisfying meal.
Ingredients
- 1 lb thick rice noodles
- 1 cup shrimp, peeled and deveined
- 4 cups shrimp stock
- 1/2 cup annatto seeds (achuete)
- 1/2 cup fish sauce
- 1/4 cup cornstarch
- 1/4 cup water
- 2 hard-boiled eggs, sliced
- 1/2 cup chicharron (pork cracklings), crushed
- 1/2 cup green onions, chopped
- 1/2 cup fried garlic
Instructions
- Soak annatto seeds in shrimp stock for 30 minutes, then strain to extract annatto oil.
- In a pot, combine shrimp stock, fish sauce, and annatto oil. Bring to a simmer.
- Add shrimp and cook until pink. Remove shrimp and set aside.
- Dissolve cornstarch in water, then pour into the simmering sauce to thicken. Set aside.
- Cook rice noodles according to package instructions, then drain.
- Assemble the dish by placing noodles in a serving plate, pouring the shrimp sauce over the noodles, and topping with shrimp, sliced eggs, chicharron, green onions, and fried garlic.
