Pancit Luglug, also known as Kapampangan Noodles, is a popular noodle dish in Kapampangan cuisine. It is made with thick rice noodles, savory shrimp sauce, and an assortment of toppings, making it a flavorful and satisfying meal.

Kapampangan Noodles (pancit Luglug)

Ingredients

  • 1 lb thick rice noodles
  • 1 cup shrimp, peeled and deveined
  • 4 cups shrimp stock
  • 1/2 cup annatto seeds (achuete)
  • 1/2 cup fish sauce
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 2 hard-boiled eggs, sliced
  • 1/2 cup chicharron (pork cracklings), crushed
  • 1/2 cup green onions, chopped
  • 1/2 cup fried garlic

Instructions

  1. Soak annatto seeds in shrimp stock for 30 minutes, then strain to extract annatto oil.
  2. In a pot, combine shrimp stock, fish sauce, and annatto oil. Bring to a simmer.
  3. Add shrimp and cook until pink. Remove shrimp and set aside.
  4. Dissolve cornstarch in water, then pour into the simmering sauce to thicken. Set aside.
  5. Cook rice noodles according to package instructions, then drain.
  6. Assemble the dish by placing noodles in a serving plate, pouring the shrimp sauce over the noodles, and topping with shrimp, sliced eggs, chicharron, green onions, and fried garlic.
