Kape (crab) Curry
Kape (Crab) Curry is a delicious and flavorful dish from Niuean cuisine that combines the sweetness of crab with aromatic spices and creamy coconut milk.
Ingredients
- 1 kg fresh crab, cleaned and cracked
- 2 tablespoons curry powder
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 thumb-sized ginger, grated
- 1 can (400ml) coconut milk
- 2 tomatoes, chopped
- 1 green chili, sliced
- Salt to taste
- 2 tablespoons cooking oil
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
- Sprinkle the curry powder over the onion mixture and stir well to coat the ingredients.
- Add the cleaned and cracked crab to the pot. Stir to combine with the onion and spice mixture.
- Pour in the coconut milk and add the chopped tomatoes and sliced green chili. Season with salt to taste.
- Cover the pot and let the curry simmer for 20-25 minutes, or until the crab is cooked through and the flavors have melded together.
- Once done, remove from heat and serve the Kape Curry hot with steamed rice or crusty bread.
