Ingredients

  • 1 kg fresh crab, cleaned and cracked
  • 2 tablespoons curry powder
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, grated
  • 1 can (400ml) coconut milk
  • 2 tomatoes, chopped
  • 1 green chili, sliced
  • Salt to taste
  • 2 tablespoons cooking oil

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
  3. Sprinkle the curry powder over the onion mixture and stir well to coat the ingredients.
  4. Add the cleaned and cracked crab to the pot. Stir to combine with the onion and spice mixture.
  5. Pour in the coconut milk and add the chopped tomatoes and sliced green chili. Season with salt to taste.
  6. Cover the pot and let the curry simmer for 20-25 minutes, or until the crab is cooked through and the flavors have melded together.
  7. Once done, remove from heat and serve the Kape Curry hot with steamed rice or crusty bread.
