Ingredients
- 1 cup kapenta fish
- 2 cups pumpkin, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/2 cup peanut butter
- 2 tomatoes, chopped
- 2 cups water or fish stock
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat and add the kapenta fish. Cook for 5 minutes, stirring occasionally.
- Add the onions and garlic to the pot and sauté until the onions are translucent.
- Add the diced pumpkin and chopped tomatoes to the pot, and stir to combine with the other ingredients.
- In a separate bowl, mix the peanut butter with water or fish stock to create a smooth paste. Pour the peanut butter mixture into the pot and stir well.
