Ingredients
- 500g lamb, cut into cubes
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 2 tomatoes, chopped
- 1 cup mixed vegetables (carrots, green beans, bell peppers)
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic and grated ginger, and cook for another minute.
- Add the lamb cubes to the pot and brown on all sides.
- Stir in the curry powder, cumin, and paprika, and cook for 2 minutes to toast the spices.
- Add the chopped tomatoes and mixed vegetables to the pot, and stir to combine.
- Pour in the coconut milk, season with salt and pepper, and bring the curry to a simmer.
- Cover the pot and let the curry simmer for 45-50 minutes, or until the lamb is tender.
- Garnish with fresh cilantro before serving.
