Ingredients

  • 500g lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 3 cloves of garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • 2 cups water
  • Fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onions and sauté until they are soft and translucent.
  3. Add the minced garlic and grated ginger, and cook for another minute.
  4. Add the lamb cubes to the pot and brown them on all sides.
  5. Stir in the diced tomatoes, coriander powder, turmeric powder, paprika, cayenne pepper, and salt. Cook for 5 minutes.
  6. Pour in the water, cover the pot, and let the curry simmer for 45-50 minutes or until the lamb is tender.
  7. Garnish with fresh cilantro and serve hot with rice or bread.
