Ingredients
- 500g lamb, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves of garlic, minced
- 1 inch ginger, grated
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- Salt to taste
- 2 cups water
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions and sauté until they are soft and translucent.
- Add the minced garlic and grated ginger, and cook for another minute.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the diced tomatoes, coriander powder, turmeric powder, paprika, cayenne pepper, and salt. Cook for 5 minutes.
- Pour in the water, cover the pot, and let the curry simmer for 45-50 minutes or until the lamb is tender.
- Garnish with fresh cilantro and serve hot with rice or bread.
