Kapusniak (cossack Cabbage Soup)
Kapusniak, also known as Cossack Cabbage Soup, is a traditional dish from Cossack cuisine that is hearty, flavorful, and perfect for cold winter days.
Ingredients
- 1 head of cabbage, shredded
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 pound of kielbasa sausage, sliced
- 6 cups of beef broth
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and carrots until they start to soften.
- Add the cabbage and cook until it begins to wilt.
- Stir in the potatoes, kielbasa sausage, beef broth, and bay leaf.
- Season with salt and pepper, then bring the soup to a boil.
- Reduce the heat and let the soup simmer for about 1 hour, or until the vegetables are tender.
- Discard the bay leaf before serving.
