Ingredients
- 1 small head of cabbage, shredded
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 1 can (14 oz) sauerkraut, drained
- 1 lb kielbasa sausage, sliced
- 6 cups vegetable or chicken broth
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, carrots, and potatoes until they begin to soften.
- Add the shredded cabbage and sauerkraut to the pot and cook until the cabbage wilts.
- Add the kielbasa sausage, broth, and bay leaf to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Season with salt and pepper to taste. Remove the bay leaf before serving.
