Kapusniak Kickback

Ingredients

  • 1 small head of cabbage, shredded
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 can (14 oz) sauerkraut, drained
  • 1 lb kielbasa sausage, sliced
  • 6 cups vegetable or chicken broth
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, carrots, and potatoes until they begin to soften.
  2. Add the shredded cabbage and sauerkraut to the pot and cook until the cabbage wilts.
  3. Add the kielbasa sausage, broth, and bay leaf to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Season with salt and pepper to taste. Remove the bay leaf before serving.
