Ingredients

  • 1 lb sauerkraut
  • 1 onion, chopped
  • 4 cups chicken or beef broth
  • 1 cup water
  • 1 lb smoked sausage, sliced
  • 1 cup diced ham
  • 1 cup chopped tomatoes
  • 1 bay leaf
  • 1 tsp paprika
  • 1/2 tsp caraway seeds
  • Salt and pepper to taste
  • 1 cup sour cream (optional, for serving)

Instructions

  1. Drain and rinse the sauerkraut to reduce its sourness.
  2. In a large pot, sauté the chopped onion until translucent.
  3. Add the sauerkraut, broth, water, smoked sausage, ham, tomatoes, bay leaf, paprika, and caraway seeds to the pot.
  4. Season with salt and pepper, then bring the soup to a boil.
  5. Reduce the heat, cover the pot, and let the soup simmer for 2 hours, stirring occasionally.
  6. Remove the bay leaf and adjust the seasoning if needed.
  7. Serve the kapustnica hot, with a dollop of sour cream if desired.
