Ingredients
- 1 lb sauerkraut
- 1 onion, chopped
- 4 cups chicken or beef broth
- 1 cup water
- 1 lb smoked sausage, sliced
- 1 cup diced ham
- 1 cup chopped tomatoes
- 1 bay leaf
- 1 tsp paprika
- 1/2 tsp caraway seeds
- Salt and pepper to taste
- 1 cup sour cream (optional, for serving)
Instructions
- Drain and rinse the sauerkraut to reduce its sourness.
- In a large pot, sauté the chopped onion until translucent.
- Add the sauerkraut, broth, water, smoked sausage, ham, tomatoes, bay leaf, paprika, and caraway seeds to the pot.
- Season with salt and pepper, then bring the soup to a boil.
- Reduce the heat, cover the pot, and let the soup simmer for 2 hours, stirring occasionally.
- Remove the bay leaf and adjust the seasoning if needed.
- Serve the kapustnica hot, with a dollop of sour cream if desired.
