Karachi Biryani (کراچی بریانی)
Karachi Biryani is a popular dish in Muhajir Cuisine, known for its aromatic flavors and rich taste. This recipe combines tender meat, fragrant rice, and a blend of spices to create a mouthwatering dish that is sure to impress.
Ingredients
- 2 cups basmati rice, soaked and drained
- 1 kg chicken or beef, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 1/2 cup cooking oil
- 4 green chilies, slit
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon black peppercorns
- 1/2 teaspoon cloves
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cardamom pods
- Salt to taste
- 4 cups water
Instructions
- Heat oil in a large pot and fry the onions until golden brown. Remove half of the fried onions and set aside for later use.
- Add the meat to the pot and cook until it changes color.
- Stir in the yogurt, tomatoes, green chilies, and all the spices. Cook for 5 minutes.
- Add the mint and coriander leaves, then cover and cook until the meat is tender.
- In a separate pot, bring 4 cups of water to a boil. Add the soaked rice and cook until it is 3/4th done. Drain the rice and set aside.
- Layer the partially cooked rice over the meat in the pot. Sprinkle the reserved fried onions on top.
- Cover the pot with a tight-fitting lid and cook on low heat for 15-20 minutes, or until the rice is fully cooked and the flavors have melded together.
- Gently fluff the biryani with a fork before serving.
