Karachi Biryani (کراچی بریانی)

Ingredients

  • 2 cups basmati rice, soaked and drained
  • 1 kg chicken or beef, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/2 cup cooking oil
  • 4 green chilies, slit
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon cloves
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cardamom pods
  • Salt to taste
  • 4 cups water

Instructions

  1. Heat oil in a large pot and fry the onions until golden brown. Remove half of the fried onions and set aside for later use.
  2. Add the meat to the pot and cook until it changes color.
  3. Stir in the yogurt, tomatoes, green chilies, and all the spices. Cook for 5 minutes.
  4. Add the mint and coriander leaves, then cover and cook until the meat is tender.
  5. In a separate pot, bring 4 cups of water to a boil. Add the soaked rice and cook until it is 3/4th done. Drain the rice and set aside.
  6. Layer the partially cooked rice over the meat in the pot. Sprinkle the reserved fried onions on top.
  7. Cover the pot with a tight-fitting lid and cook on low heat for 15-20 minutes, or until the rice is fully cooked and the flavors have melded together.
  8. Gently fluff the biryani with a fork before serving.
