Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 3 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 2 large eggs
- 1/2 cup grated Gruyère cheese
Instructions
- In a food processor, pulse the flour and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs. Add 3-4 tablespoons of ice water and pulse until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface and transfer it to a tart pan. Press the dough into the pan and trim any excess. Prick the bottom with a fork and bake for 15 minutes.
- While the crust is baking, heat the butter and olive oil in a large skillet over medium heat. Add the sliced onions, sugar, salt, and pepper. Cook, stirring occasionally, until the onions are caramelized, about 20-25 minutes.
- In a bowl, whisk together the heavy cream and eggs. Season with salt and pepper.
- Spread the caramelized onions over the pre-baked crust. Pour the cream mixture over the onions and sprinkle with grated Gruyère cheese.
- Bake the tart for 25-30 minutes, or until the filling is set and the crust is golden brown.
- Let the tart cool for a few minutes before slicing and serving.
