Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 3 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1/2 cup grated Gruyère cheese

Instructions

  1. In a food processor, pulse the flour and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs. Add 3-4 tablespoons of ice water and pulse until the dough comes together.
  2. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out the dough on a floured surface and transfer it to a tart pan. Press the dough into the pan and trim any excess. Prick the bottom with a fork and bake for 15 minutes.
  5. While the crust is baking, heat the butter and olive oil in a large skillet over medium heat. Add the sliced onions, sugar, salt, and pepper. Cook, stirring occasionally, until the onions are caramelized, about 20-25 minutes.
  6. In a bowl, whisk together the heavy cream and eggs. Season with salt and pepper.
  7. Spread the caramelized onions over the pre-baked crust. Pour the cream mixture over the onions and sprinkle with grated Gruyère cheese.
  8. Bake the tart for 25-30 minutes, or until the filling is set and the crust is golden brown.
  9. Let the tart cool for a few minutes before slicing and serving.
