Kare Ayam (coconut Curry Chicken)

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 2 cups cooked rice, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  2. Add the chicken pieces to the pot and cook until they are browned on all sides.
  3. Sprinkle the curry powder, turmeric, cumin, and coriander over the chicken. Stir well to coat the chicken with the spices.
  4. Pour in the coconut milk and bring the curry to a simmer. Cover the pot and let it cook for 30 minutes, or until the chicken is tender and the flavors have melded together.
  5. Season the curry with salt and pepper to taste.
  6. Serve the Kare Ayam hot over cooked rice.
