Kare Ayam (coconut Curry Chicken)
Kare Ayam is a traditional East Timorese coconut curry chicken dish that is bursting with flavor. This creamy and aromatic curry is made with tender chicken, rich coconut milk, and a blend of fragrant spices. It's a comforting and satisfying dish that is perfect for a cozy dinner at home.
Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 2 tbsp vegetable oil
- Salt and pepper to taste
- 2 cups cooked rice, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Sprinkle the curry powder, turmeric, cumin, and coriander over the chicken. Stir well to coat the chicken with the spices.
- Pour in the coconut milk and bring the curry to a simmer. Cover the pot and let it cook for 30 minutes, or until the chicken is tender and the flavors have melded together.
- Season the curry with salt and pepper to taste.
- Serve the Kare Ayam hot over cooked rice.
