Kare-kare Carnival

Kare-Kare Carnival is a festive and flavorful Filipino stew made with oxtail, tripe, and a variety of vegetables, all simmered in a rich peanut sauce. This dish is perfect for special occasions and gatherings, as it is a true crowd-pleaser.

Ingredients

  • 1 kg oxtail, cut into pieces
  • 500g beef tripe, cleaned and sliced
  • 1 cup peanut butter
  • 1 eggplant, sliced
  • 1 bunch of bok choy
  • 1 banana heart, sliced
  • 1/2 cup annatto seeds (achuete)
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 8 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, boil the oxtail and tripe in water until tender, about 1.5 hours.
  2. Remove the meat from the pot and set aside. Reserve the broth.
  3. In a separate pan, sauté the annatto seeds in oil until the oil turns red. Strain the seeds and discard.
  4. Sauté the garlic and onion in the annatto oil until fragrant.
  5. Add the peanut butter and cook for 2 minutes.
  6. Pour in the reserved broth and bring to a simmer.
  7. Add the oxtail and tripe back into the pot and simmer for 10 minutes.
  8. Add the eggplant, banana heart, and bok choy. Simmer until the vegetables are tender.
  9. Season with salt and pepper to taste.
