Kare-kare Carnival
Kare-Kare Carnival is a festive and flavorful Filipino stew made with oxtail, tripe, and a variety of vegetables, all simmered in a rich peanut sauce. This dish is perfect for special occasions and gatherings, as it is a true crowd-pleaser.
Ingredients
- 1 kg oxtail, cut into pieces
- 500g beef tripe, cleaned and sliced
- 1 cup peanut butter
- 1 eggplant, sliced
- 1 bunch of bok choy
- 1 banana heart, sliced
- 1/2 cup annatto seeds (achuete)
- 1 onion, chopped
- 4 cloves garlic, minced
- 8 cups water
- Salt and pepper to taste
Instructions
- In a large pot, boil the oxtail and tripe in water until tender, about 1.5 hours.
- Remove the meat from the pot and set aside. Reserve the broth.
- In a separate pan, sauté the annatto seeds in oil until the oil turns red. Strain the seeds and discard.
- Sauté the garlic and onion in the annatto oil until fragrant.
- Add the peanut butter and cook for 2 minutes.
- Pour in the reserved broth and bring to a simmer.
- Add the oxtail and tripe back into the pot and simmer for 10 minutes.
- Add the eggplant, banana heart, and bok choy. Simmer until the vegetables are tender.
- Season with salt and pepper to taste.
