Kare-kare Delight
Kare-Kare Delight is a traditional Filipino stew that originated from the Kapampangan cuisine. This dish is known for its rich and savory peanut sauce, tender meat, and an assortment of vegetables. It's a popular choice for special occasions and family gatherings.
Ingredients
- 1 lb oxtail, cut into 2-inch pieces
- 1 lb beef tripe, cleaned and cut into strips
- 1 cup peanut butter
- 1 eggplant, sliced
- 1 bunch of bok choy
- 1 banana heart, sliced
- 1/2 cup annatto seeds (achuete)
- 1 onion, chopped
- 4 cloves garlic, minced
- 6 cups water
- Salt and pepper to taste
Instructions
- In a large pot, boil the oxtail and tripe in water for about 1 hour or until tender.
- Once the meat is tender, remove it from the pot and set aside.
- In a separate pan, sauté the garlic and onion until fragrant.
- Add the peanut butter and annatto seeds, then pour in the broth from the boiled meat.
- Stir the mixture until it thickens, then add the oxtail and tripe back into the pot.
- Add the eggplant and banana heart, and let it simmer for 5 minutes.
- Add the bok choy and cook for another 2 minutes.
- Season with salt and pepper to taste.
- Serve hot with steamed rice.
