Ingredients

  • 1 lb oxtail, cut into 2-inch pieces
  • 1 lb beef tripe, cleaned and cut into strips
  • 1 cup peanut butter
  • 1 eggplant, sliced
  • 1 bunch of bok choy
  • 1 banana heart, sliced
  • 1/2 cup annatto seeds (achuete)
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 6 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, boil the oxtail and tripe in water for about 1 hour or until tender.
  2. Once the meat is tender, remove it from the pot and set aside.
  3. In a separate pan, sauté the garlic and onion until fragrant.
  4. Add the peanut butter and annatto seeds, then pour in the broth from the boiled meat.
  5. Stir the mixture until it thickens, then add the oxtail and tripe back into the pot.
  6. Add the eggplant and banana heart, and let it simmer for 5 minutes.
  7. Add the bok choy and cook for another 2 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot with steamed rice.
