Kare-kareng Bagnet

Ingredients

  • 1 kg bagnet, cut into serving pieces
  • 1 cup peanut butter
  • 4 cups water
  • 1 eggplant, sliced
  • 1 bunch of string beans, cut into 2-inch pieces
  • 1 banana blossom, sliced
  • 1/2 cup annatto seeds (achuete)
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 3 tablespoons cooking oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the cooking oil and sauté the garlic and onion until fragrant.
  2. Add the bagnet and cook until crispy.
  3. Add the annatto seeds and water, then bring to a boil. Simmer for 30 minutes.
  4. Stir in the peanut butter until well combined.
  5. Add the eggplant, string beans, and banana blossom. Cook until the vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot with steamed rice.
