Kare-kareng Bagnet

Ingredients
- 1 kg bagnet, cut into serving pieces
- 1 cup peanut butter
- 4 cups water
- 1 eggplant, sliced
- 1 bunch of string beans, cut into 2-inch pieces
- 1 banana blossom, sliced
- 1/2 cup annatto seeds (achuete)
- 4 cloves garlic, minced
- 1 onion, chopped
- 3 tablespoons cooking oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the cooking oil and sauté the garlic and onion until fragrant.
- Add the bagnet and cook until crispy.
- Add the annatto seeds and water, then bring to a boil. Simmer for 30 minutes.
- Stir in the peanut butter until well combined.
- Add the eggplant, string beans, and banana blossom. Cook until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot with steamed rice.
