Beef Kare-Kare, also known as Kare-Kareng Baka, is a traditional Filipino stew made with tender beef, vegetables, and a rich peanut sauce. This dish is a classic in Kapampangan cuisine, known for its savory and nutty flavors.

Kare-Kareng Baka (Beef Kare-Kare)

Ingredients

  • 2 lbs beef shank, cut into chunks
  • 1/2 cup peanut butter
  • 1 eggplant, sliced
  • 1 bunch bok choy (pechay), ends trimmed
  • 1 banana heart (puso ng saging), sliced
  • 1/2 cup annatto seeds (achuete)
  • 8 cups water
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 tablespoons cooking oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Sauté the garlic and onions until fragrant.
  2. Add the beef shank and cook until browned on all sides.
  3. Pour in the water and bring to a boil. Reduce heat and simmer for 1.5 to 2 hours or until the beef is tender.
  4. While the beef is simmering, prepare the peanut sauce. In a separate pan, heat the annatto seeds and cooking oil. Once the oil turns red, remove the seeds and discard.
  5. Add the peanut butter to the pan and cook over low heat, stirring constantly, until the oil separates and the peanut butter turns into a thick sauce.
  6. Once the beef is tender, add the peanut sauce to the pot. Stir to combine and season with salt and pepper to taste.
  7. Add the eggplant, banana heart, and bok choy to the pot. Cook for another 5-7 minutes or until the vegetables are tender.
  8. Remove from heat and serve hot with steamed rice.
