Kare-Kareng Baka (Beef Kare-Kare)
Beef Kare-Kare, also known as Kare-Kareng Baka, is a traditional Filipino stew made with tender beef, vegetables, and a rich peanut sauce. This dish is a classic in Kapampangan cuisine, known for its savory and nutty flavors.
Ingredients
- 2 lbs beef shank, cut into chunks
- 1/2 cup peanut butter
- 1 eggplant, sliced
- 1 bunch bok choy (pechay), ends trimmed
- 1 banana heart (puso ng saging), sliced
- 1/2 cup annatto seeds (achuete)
- 8 cups water
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 tablespoons cooking oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the cooking oil over medium heat. Sauté the garlic and onions until fragrant.
- Add the beef shank and cook until browned on all sides.
- Pour in the water and bring to a boil. Reduce heat and simmer for 1.5 to 2 hours or until the beef is tender.
- While the beef is simmering, prepare the peanut sauce. In a separate pan, heat the annatto seeds and cooking oil. Once the oil turns red, remove the seeds and discard.
- Add the peanut butter to the pan and cook over low heat, stirring constantly, until the oil separates and the peanut butter turns into a thick sauce.
- Once the beef is tender, add the peanut sauce to the pot. Stir to combine and season with salt and pepper to taste.
- Add the eggplant, banana heart, and bok choy to the pot. Cook for another 5-7 minutes or until the vegetables are tender.
- Remove from heat and serve hot with steamed rice.
