Kare-Kareng Pata (Pork Hock Kare-Kare)
Pork Hock Kare-Kare (Kare-Kareng Pata) is a traditional Filipino dish that originated from the Kapampangan cuisine. It is a rich and flavorful stew made with pork hock, vegetables, and a thick peanut sauce. This dish is perfect for special occasions and gatherings.
Ingredients
- 2 lbs pork hock
- 1 cup peanut butter
- 1 eggplant, sliced
- 1 bunch bok choy
- 1 banana heart, sliced
- 1/2 cup annatto seeds (achuete)
- 1 onion, chopped
- 4 cloves garlic, minced
- 8 cups water
- Salt and pepper to taste
Instructions
- In a large pot, boil the pork hock in water for about 1.5 to 2 hours or until tender. Remove scum that rises to the surface.
- Once the pork hock is tender, remove it from the pot and set aside. Strain the pork broth and reserve 6 cups.
- In a separate pan, heat annatto seeds with oil. Once the oil turns red, remove the seeds and discard. Set the annatto oil aside.
- In the same pan, sauté garlic and onion until fragrant. Add the peanut butter and annatto oil. Cook for 2-3 minutes.
- Pour in the reserved pork broth and bring to a simmer. Add the boiled pork hock and simmer for 10 minutes.
- Add the eggplant, banana heart, and bok choy. Cook until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot with steamed rice.
