Kare-kareng Spring Rolls
Kare-Kareng Spring Rolls are a delicious twist on the traditional Filipino dish, Kare-Kare. These crispy spring rolls are filled with a flavorful mixture of oxtail, tripe, and vegetables, and served with a rich peanut sauce.
Ingredients
- 12 spring roll wrappers
- 1 cup cooked oxtail, shredded
- 1 cup cooked tripe, sliced
- 1 cup green beans, julienned
- 1 cup eggplant, julienned
- 1 cup peanut butter
- 1 onion, minced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons cooking oil
- Salt and pepper to taste
Instructions
- In a pan, heat the cooking oil over medium heat. Sauté the garlic and onion until fragrant.
- Add the shredded oxtail and sliced tripe. Cook for 5 minutes.
- Pour in the beef broth and bring to a boil. Simmer for 15 minutes.
- Add the peanut butter and stir until well combined. Season with salt and pepper.
- Remove the mixture from the heat and let it cool.
- Place a spoonful of the mixture on each spring roll wrapper, along with some julienned green beans and eggplant.
- Roll the wrappers, tucking in the sides, and seal the edges with water.
- Heat oil in a pan and fry the spring rolls until golden brown and crispy.
- Drain the spring rolls on paper towels to remove excess oil.
- Serve the Kare-Kareng Spring Rolls with the remaining peanut sauce on the side.
