Kare-kareng Spring Rolls

Kare-Kareng Spring Rolls are a delicious twist on the traditional Filipino dish, Kare-Kare. These crispy spring rolls are filled with a flavorful mixture of oxtail, tripe, and vegetables, and served with a rich peanut sauce.

Ingredients

  • 12 spring roll wrappers
  • 1 cup cooked oxtail, shredded
  • 1 cup cooked tripe, sliced
  • 1 cup green beans, julienned
  • 1 cup eggplant, julienned
  • 1 cup peanut butter
  • 1 onion, minced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

Instructions

  1. In a pan, heat the cooking oil over medium heat. Sauté the garlic and onion until fragrant.
  2. Add the shredded oxtail and sliced tripe. Cook for 5 minutes.
  3. Pour in the beef broth and bring to a boil. Simmer for 15 minutes.
  4. Add the peanut butter and stir until well combined. Season with salt and pepper.
  5. Remove the mixture from the heat and let it cool.
  6. Place a spoonful of the mixture on each spring roll wrapper, along with some julienned green beans and eggplant.
  7. Roll the wrappers, tucking in the sides, and seal the edges with water.
  8. Heat oil in a pan and fry the spring rolls until golden brown and crispy.
  9. Drain the spring rolls on paper towels to remove excess oil.
  10. Serve the Kare-Kareng Spring Rolls with the remaining peanut sauce on the side.
