Ingredients
- 1 whole chicken, cut into pieces
- 2 large onions, finely chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 3-4 potatoes, peeled and quartered
- 2 tomatoes, chopped
- 1 cup coconut milk
- 3 tbsp vegetable oil
- 2 tbsp tamarind paste
- 1 tbsp sugar
- Salt to taste
Instructions
- Heat oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the chicken pieces and cook until they are browned on all sides.
- Stir in the tamarind paste, sugar, and salt. Add the potatoes and tomatoes. Pour in the coconut milk and enough water to cover the chicken.
- Bring the curry to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the chicken is cooked through and the potatoes are tender.
- Adjust the seasoning to taste. Serve the Kari Ayam Debal hot with steamed rice or crusty bread.
