Ingredients

  • 1 whole chicken, cut into pieces
  • 2 large onions, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 3-4 potatoes, peeled and quartered
  • 2 tomatoes, chopped
  • 1 cup coconut milk
  • 3 tbsp vegetable oil
  • 2 tbsp tamarind paste
  • 1 tbsp sugar
  • Salt to taste

Instructions

  1. Heat oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  2. Add the chicken pieces and cook until they are browned on all sides.
  3. Stir in the tamarind paste, sugar, and salt. Add the potatoes and tomatoes. Pour in the coconut milk and enough water to cover the chicken.
  4. Bring the curry to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the chicken is cooked through and the potatoes are tender.
  5. Adjust the seasoning to taste. Serve the Kari Ayam Debal hot with steamed rice or crusty bread.
