Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons Nyonya curry powder
- 1 tablespoon tamarind paste
- 1 cup coconut milk
- 2 potatoes, peeled and cubed
- 2 tomatoes, diced
- 3 tablespoons cooking oil
- Salt to taste
Instructions
- Heat the cooking oil in a large pot over medium heat. Add the chopped onions and minced garlic, and sauté until fragrant.
- Add the Nyonya curry powder to the pot and stir well to coat the onions and garlic.
- Add the chicken pieces to the pot and cook until they are lightly browned on all sides.
- Stir in the tamarind paste and coconut milk, then add the cubed potatoes and diced tomatoes. Season with salt to taste.
- Cover the pot and let the curry simmer for about 45-50 minutes, or until the chicken is cooked through and the potatoes are tender.
- Once the curry is ready, serve hot with steamed rice or crusty bread.
