Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Nyonya curry powder
  • 1 tablespoon tamarind paste
  • 1 cup coconut milk
  • 2 potatoes, peeled and cubed
  • 2 tomatoes, diced
  • 3 tablespoons cooking oil
  • Salt to taste

Instructions

  1. Heat the cooking oil in a large pot over medium heat. Add the chopped onions and minced garlic, and sauté until fragrant.
  2. Add the Nyonya curry powder to the pot and stir well to coat the onions and garlic.
  3. Add the chicken pieces to the pot and cook until they are lightly browned on all sides.
  4. Stir in the tamarind paste and coconut milk, then add the cubed potatoes and diced tomatoes. Season with salt to taste.
  5. Cover the pot and let the curry simmer for about 45-50 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Once the curry is ready, serve hot with steamed rice or crusty bread.
