Ingredients
- 1 kg beef, cut into cubes
- 4 shallots, finely chopped
- 5 cloves garlic, minced
- 3 red chilies, sliced
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 400ml coconut milk
- 2 tbsp tamarind paste
- 1 tbsp palm sugar
- Salt to taste
Instructions
- In a large pot, combine the beef, shallots, garlic, red chilies, lemongrass, and kaffir lime leaves.
- Pour in the coconut milk and add the tamarind paste, palm sugar, and salt.
- Cook over low heat for 2 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
- Serve the Kari Ayam hot with steamed rice.
