Kari Ayam (spicy Beef Rendang)

Ingredients

  • 1 kg beef, cut into cubes
  • 4 shallots, finely chopped
  • 5 cloves garlic, minced
  • 3 red chilies, sliced
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 400ml coconut milk
  • 2 tbsp tamarind paste
  • 1 tbsp palm sugar
  • Salt to taste

Instructions

  1. In a large pot, combine the beef, shallots, garlic, red chilies, lemongrass, and kaffir lime leaves.
  2. Pour in the coconut milk and add the tamarind paste, palm sugar, and salt.
  3. Cook over low heat for 2 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  4. Serve the Kari Ayam hot with steamed rice.
