Kari Ayam (spicy Chicken Curry)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 inches ginger, grated
  • 3 tomatoes, diced
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chopped onions, minced garlic, and grated ginger. Sauté until fragrant.
  3. Add the chicken pieces and cook until browned.
  4. Stir in curry powder, turmeric powder, and chili powder. Mix well.
  5. Add diced tomatoes and coconut milk. Season with salt.
  6. Cover and simmer for 45-50 minutes, or until the chicken is tender.
  7. Serve hot with steamed rice.
